Shunyo, a sake rice that has been gaining attention in recent years, has a clear flavor without the cloying taste of other sake rice because it is lower in glutelin, an amino acid, than most other rice. It produces a fruity aroma like muscat or pear and a refined sake quality.
Sake rice is Shunyo from Kumamoto Prefecture, rice polishing ratio is 55%, yeast is Shizuoka Ginjo yeast
