I wanted to compare different yeasts, but I can't drink a lot, so I'll just stick with 1801 yeast for now💦 I really like the taste. It's moderately sweet, spicy, and robust. I was told by the store owner that it is called "Doshiri" and I will use it as soon as I can... Anyway, it was delicious. Come to think of it, the Li Bai that I enjoyed drinking the other day is also from Shimane Prefecture. I guess there are many other sake from Shimane Prefecture that I like as well...
