This is a honjozo made with Yume-no-Kou, a rice suitable for sake brewing in Fukushima. I was not fond of honjozo when I drank other sake, but this honjozo was exceptional. The aroma is mild, and in the mouth it has a good balance of sweetness and acidity, with a fruity overtone. When opened, there was a fizzy sensation on the tip of the tongue, and as it rolled around on the tongue, a pleasant sweetness followed. After the second day, the sweetness increased even more, so I drank it with ice.
