All Yamada-Nishiki is used. Polishing ratio 55%, alcohol content 15%. The delicious flavor of Yamada-Nishiki spreads. It has a fruity sweetness. As is typical of hiyaoroshi, it is a sake to be drunk while enjoying the flavors of autumn. I would like to enjoy it slowly while eating autumn fish and maitake mushroom tempura. It is indeed a great sake.
