As I have been drinking a lot of modern, easy-drinking sake recently, I chose Bikyuu as a sake that would go well with a meal.
The aroma was subdued, but the sake had a freshness that is typical of nama-zake.
It also has a nice sharpness, making it easy to pair with meals.
We enjoyed it as an accompaniment to New Year's Eve soba noodles.
It was very tasty and went well with soba noodles.
