Among the many fine sake brands in Toyama, this brand boasts charismatic popularity. The brewery was founded in 1906, the year after the Russo-Japanese War ended. After returning from the war, the first brewer opened a sake brewery in his hometown, Takaoka City, and chose "Kachikoma" as the brand name to commemorate his victory in the Russo-Japanese War. In keeping with the image of the sake's name, the brewery's philosophy is to "not tolerate falsehoods," and to maintain a quality-centered approach to sake brewing by "not mass-producing" and "not unnecessarily increasing the number of items. The standard lineup is quite simple, consisting of only five types of sake: daiginjo and junmai ginjo brewed with Yamadanishiki, junmai sake using Gohyakumangoku, honjozo, and regular sake. All but the regular sake use only one yeast, Kanazawa yeast.
