From the Etiquette
This product is a limited production Junmai Daiginjo-shu made from "Kameiki" rice produced in Takahata, Yamagata Prefecture.
Kameiki" is an original mutation of Kame-no-o rice, and offers a mellow aroma, refreshing acidity, and a refined, artistic touch.
The ears of "Kame-iki" rice have "wild hair" on the tips to protect themselves from enemies. The name "Kameiki" comes from its beard-like appearance and the use of traditional sake-like mustache characters on the label.
