It has been many years since I have had this sake. It had been a hot day and I wanted a light sweet and sour sake, so I bought it.
I started with the supernatant as usual.
When I poured it out, it was more yellowish than I expected. I was a little surprised because I did not remember much about the last time. The taste is sweet and sour as expected, but the aroma that goes through the nose is a little bit bitter.
Even if you mix the oli, this color does not go away. However, the taste changes drastically. The taste is silky, of course, but the tingling sensation disappears when the oli is mixed in. The acidity becomes more pronounced, and the sweetness comes in the aftertaste. I think it would be tough to match it with Japanese food, but today I tried it with short pasta peperoncino. It is quite good. I found an interesting combination.
