SeiichiI bought Shitaizumi last month. This is the first time I have had this sake.
What is this "evolving sake"? I am curious.
It has a light, soft sweetness when cold. At room temperature, it has a little more richness. When heated, the gentle sweetness stands out. I wonder if it will change over time. I drank it up easily without spending much time 💦.
