I bought a 4-ounce bottle and drank a cup with an inokuchi. The color is a white orikara, and the texture is surprisingly smooth without being rough. It has a refreshing ginjo aroma. In the mouth, it has a fruity, juicy, mellow, dark flavor that is typical of unfiltered, unpasteurized sake, and a definite gaseous sensation that spreads out and has a strong impact. The combination of moderate bitterness, acidity, and aroma reminds one of grapefruit. There is also a yogurtiness, perhaps due to the orikarami. The impression is that the sake's namaishu sensation is hidden behind these flavors, which is just right. While the taste is not conventional, if you look at the other components, you will find that it is surprisingly free of miscellaneous flavors, which is typical of Junmai Daiginjos. The taste is gorgeous on the palate, with a pleasant bitterness that quickly fades away in the finish. The overall impression is of a modern, leading-class sake.
