I got this sake from a friend in Akita. He knew I like "unpolished sake", so he made a wonderful choice.
The first sip of the bottle.
Oh! This is a genin's favorite.
At worst, it tastes like low polished rice. However, there is a lot of flavor in this richness, and the aftertaste is full of acidity and a bitter aftertaste. Akita yeast №12 is also characterized by acidity.
When you drink low-milled rice, you tend to expect to be surprised by the taste that doesn't seem like low-milled rice even though it is. However, I found a sentence in the introduction of this sake at a certain liquor store that convinced me.
It says, "The miscellaneous taste that is often associated with low-milling rice has become thicker, and the gloominess has become umami.
I thought it was a perfect expression.
Some people may not like this flavor, though.
By the way, it was a good match when I ate it with seared tuna pieces. It seems to melt with the food which has a sour taste.
Personally, I love Fukukomachi and Kakuemon's unpasteurized sake, but again, the paisen selection was interesting.
