100% Yamadanishiki, 59% polished rice. Alcohol content 16%. It is a fruity yet full-bodied sake with a strong Yamadanishiki flavor. The orange sunset-inspired label is also nice. I grilled some shiitake mushrooms and served them with a dash of soy sauce. It was delicious and did not interfere with the aroma of the shiitake mushrooms, but rather complimented them nicely. The label reads, "Yamada-Nishiki, the king of sake rice, is 100% Yamada-Nishiki, which is brewed, aged in ice, and then hi-irated. It has a ripe fruit-like flavor and acidity. It is recommended to drink it chilled and slowly enjoy the natural return of the sake's temperature and the change in flavor as it expands and changes in the glass. This is a dining sake to be enjoyed slowly.
