It is a junmai daiginjo, but it is quite crisp! The sweetness and gorgeousness are quite subdued, and the sake has the taste of rice and a sense of transparency.
It has a strong sharpness, so it might not be a good match for sashimi... but it goes well with engawa (raw fish). Is it the presence or absence of fat? It went well with lebakatsu with sauce.
