Yamada-Nishiki 2022 Nama Sake, made in a wooden barrel.
When opened, it has a firm effervescence like a sparkling wine.
The aroma is of white peaches, white flowers, and well-polished raw materials such as Kamishinko powder.
The sweetness on the attack is subdued, and the mouthfeel is much drier than the aroma suggests.
The sweet and sour taste can be felt from the mid-palate, but the second half of the palate is still dry.
