A limited release of "Nijiiro-Bakuren Super Dry Daiginjo" from Kamenoi Shuzo, Haguro-machi, Tsuruoka City, Yamagata Prefecture, is now available.
Nijiiro Bakuren Super Dry Daiginjo is a daiginjo brewed with 33% polished Dewanosato, Yamagata Prefecture's preferred rice for sake brewing.
Kamenoi Shuzo basically uses Association 10 yeast. Association No. 10 yeast (Ogawa yeast) was developed by Chikara Ogawa and produces a refreshing ginjo aroma with little acidity.
