I bought two bottles a few years ago and this one is over 3 years old. It was originally a 5 year old aged sake, so in effect it is now an 8 year old all koji aged sake...! When I opened the bottle and poured it, I found a dense & burnt aroma of caramel, brown sugar, and caramel. The mouthfeel is rich and mellow. The sweetness, which is a combination of woodiness and a burning sensation, tastes like bourbon or caramel pudding. It is sweet and astringent with a berry-like taste like prunes! It has been moved around a lot, being put in a storage room, in the refrigerator and under the kitchen, but there is no sense of deterioration, which is a relief 😌. I will enjoy the taste of koji slowly and carefully!
