On this day, we visited Nihonshu Tsubaki to taste a sake pairing.
The first item served with the "amberjack nameko" was the Kaze no Mori.
I think this one was chosen because of its refreshing acidity, as lemongrass is used in the nameko.
I learned to chew my meal well and drink sake while savoring it.
Pairing, or to put it a little more crudely, considering the taste of sake as a mealtime drink, is a different way of expressing the original taste of sake alone.
Interesting but difficult.
Kaze no Mori is a great sake, and it seems to go well with fresh fish.
