Haneya after a long time.
The package is beautiful Dewa-no-sato.
The aroma is light, with a sweet peachy aroma in the distance.
I thought Haneya was sweet, but it has a surprisingly dry mouthfeel.
But it is soft, free of cloying taste, and easy to drink.
Both umami and acidity are well balanced, too good to find words to describe...
I have the impression that this sake goes better with salt than soy sauce.
Pairing: Hamachi sashimi, dashimakazume egg, garland chrysanthemum salad with raw ham and salted kelp, mushrooms with butter and soy sauce, tomato with Camembert cheese
