◉2023 BY Ojiro, fresh yeast, Watafune Nigo-Junmai, fire-brewed
The aroma is rich, the acidity spreads gently, and the richness is soft.
◉Kimanoh: 2024 BY Junmai Ginjyo Hi-ire Jinryokumai
This is a new Junmai-Ginjo made from the same sake yeast as the original, and will be on sale from mid-October. The rice was given to the brewery by Shojo Shiki, and the name "Jinriki" is also used to refer to the good quality of the rice. It has a gentle sourness, and it was like my mouth was filled with sourness the whole time, yummy.
◉Kyoryoshinou 2024 BY Namaisho Junmai Ginjyo Namaishu Jinryokumai
This one is fresh, with a full flavor, but the acidity is subdued. A little chocolaty.
◉AS TIME GOES BY Namaishimo Junmai Namaishu
This is an aged sake, just like the name says: "As Time Goes By", with a sticker attached to the 2021 Nama Sake Plan for Aged Sake. It has a chocolaty and mature taste, but also has a minerality and a fullness that is like a flèche even though it is matured.
