When I sipped it fresh out of the fridge, I was a little concerned about the acid impression on the back end, so I let it sit for a little while.
When the temperature rises a little, you can feel the mellow umami and the balance with the acidity is to your liking😊.
There is also a slight lactic acid flavor in the aftertaste that is similar to that of a traditional yeast mash, and overall it is nicely integrated.
After drinking the sake on its own for a while, I felt a slight astringency on my tongue? I personally like it as a food sake👍.
When you eat, the mellow flavor and clean acidity of this sake will play a good role, so both food and sake will progress.
I enjoyed it with horse mackerel tataki and grilled shabu✨.
