We are having Imari beef and Imari sake together, which my brother-in-law gave me. It is a memorable day. The brewer loves professional wrestling, so he calls his sake "Vertical Drop". It is a "Shizuku-tsuri". A small amount is made twice a year. It has a ginjo aroma typical of Yamadanishiki and a clean throat that disappears easily. It is a perfect match with Imari beef. I am very grateful to my brother-in-law who gave me both of them as gifts.

Thank you, Jay & Nobby. I created this list after someone suggested that I organize the brands I drank from a few years ago. Some of them are not clear such as Junmai Ginjo and Honjozo. I will continue to challenge myself by looking at your evaluations 😊.
