Sake with an undisclosed rice polishing ratio. It's probably a Junmai Daiginjo.
When I looked it up, I found out that it is a special limited edition sake that was brewed using "Hitogochi" rice from Nagano Prefecture before the main brewing process.
When I poured it into a glass, the aroma was a mild ginjo scent, but the ori spread out like haze, and the way the light shone through it was just like "hikarizas in haze.
When I drank it, my first impression was that the sweetness, umami, and acidity unique to the ori were a perfect match. It has a very elegant taste.
In the current era of corona disasters, I thought it would be cool to have hikarizas in the haze, so I had it for New Year's.
