This is a limited edition of Kudokutake's popular super dry ginjo-shu "Bakuren", which is the result of the insatiable spirit of challenge of Mr. Toshiharu Imai, the President and Toji who directs Kudokutake's sake brewing.
Following "Bakuren" and "Name-Bakuren", which are the ultimate dry sake from a different angle proposed by Kudokutagide, the third in the series uses "Yamadaho", the mother of Yamadanishiki, as the raw material rice, and is the ultimate in ginjo umami dry sake.
White Bakuren is an evolution of Bakuren, made with 55% polished Banshu Yamada-ho, brewed with Ogawa M310 yeast, and bottled raw.
When you hold the glass close to you, you can smell the beautiful ginjo aroma. When you sip it, you will first taste the elegant and rich flavor of the Yamadaho rice, but soon the sharpness of the super dry taste that is typical of Bakuren appears, and it has a good finish.
Even though it is a high alcohol, super dry sake, it has an excellent balance of flavors and tastes, and is characterized by its fresh clarity, full flavor, and intense spiciness.
