Well, the acidity and slight bubbles are just right for this temperature. I was surprised because the Tsuchida sake I drank before had a mirin-like depth of flavor, which I was not very fond of. This is delicious. I was told that the taste changes, so half of it was killed in the blink of an eye, but the rest will be left for tomorrow.
