Kubota Brewery used to be a subcontractor for a major brewer in Nada.
The rice used is Fukui Yamadanishiki grown in-house.
All of the breweries here seem to use Yamadanishiki grown in-house.
The image on the label made me think of a classic dry sake, but I got the impression that it was slightly spicy with a touch of sweetness and more floral than I expected.
He said the brewery was very clean and beautiful.
