This is the first bottle brewed by a method we have ever seen.
We are very excited about this unique technique.
The aroma is relatively mild, with clear acidity and fruity notes.
The milky mouthfeel, typical of Omachi, is followed by a firm body, umami, and crisp bitterness.
It is a little different from the image I had of Kaze no Mori, and heavier in a good sense.
It is a bit like sake from Fukushima, isn't it?
It is very delicious.
Postscript
After leaving it overnight, it became fruity and light like Kaze no Mori.
It's like a fruity sandwich, from fruity to umami to fruity, and the aftertaste is wonderful.
