At Senza Kitchen, a roadside station. When I saw it, I thought, "Oh! I couldn't help but exclaim "Tenbi! I couldn't help but exclaim, "Oh, Tenbi!" lol I bought a special junmai and a junmai ginjo, both raw. After 3 days of drinking, the spiciness increased, but the balance of acidity and sweetness was maintained. Special Junmai? Here we go. I wonder what junmai ginjo would be like. My wife, who does not drink sake but is more critical of the taste than I am, also thought it was delicious.
