The third brewery at the Shimane Sake Fair.
■Ichimiya Sake Brewery "Iwami Ginzan", Shimane Prefecture/Ota City
Rika Asano and Satoki Asano, a young couple, are the toji (master brewers), and the husband is a former nurse.
They use a fantastic sake rice called "Kairyo Hattan Nagare," which is difficult to cultivate.
Sakonishiki, Shimane's sake rice, is a cross between Kairyohattannagare and Kinmonishiki.
The couple came together; Rika is bright and cheerful and friendly, while Reiki is taciturn and shy. It was a very smiling and heartwarming booth.
The special junmai Hiyahoroshi.
The flavor spreads and then the acidity is felt, and it's delicious.
Junmai Ginjo Rika Koryoryu Hachiganryu
This sake is named after the toji (master brewer). It has a beautiful and gentle impression, just as the name implies. I really wanted to try Kaihatanryu 😁.
Ichinomiya TANE
There are 3 types of new products: Hi-ire, Nigori, and Nama. Among them, I tasted the raw one. It was thick, sweet, fruity, fresh, and a little sour.
Yukika
A 5% alcohol Karu-pisu soda.
