Meliosma myriantha Winey and slightly apple-like with apple yeast? Refreshingly dry with a sour taste. The label looks like it is for people who want to like sake. The brewery is a "registered tangible cultural property (building)" I would like to visit. The brewery uses natural sake yeast isolated and cultivated from "Hana" (flower). The name is derived from Mt. Amabuki, which rises to the northeast of the brewery.
