The first glass is just like a white wine.
The second glass was slightly warmer and sweeter. At the same time, the astringent taste increased, just like wine.
The third glass was even sweeter and more fragrant, with less astringency.
It is interesting to see the change in taste as the wine returns to room temperature from its well chilled state.
On the second day after opening the bottle, the aroma and sweetness both increased, and the taste changed to become more like sake.
It went from a white wine-like sake to a sake that tastes like white wine.
