Tasted Junmai Daiginjo and Daiginjo at KURABO of Takano Shuzo, a sake brewery tour in Niigata, and bought this one.
I got the impression that the Junmai Daiginjo had a stronger aroma, sweetness and acidity. The Daiginjo was mellower and I thought, "This one! but when I drank it at home, this one was sweet enough! It is rich and delicious!
Because it is unfiltered, the alcohol content is 18%.
But it has a light taste, or rather, it doesn't come up in your mouth after it goes down your throat.
You can taste the elegance of this sake.
We enjoyed it with soft-tasting kama-age shirasu (dried sardines).
