Mountain Ma Yum! I drank it a while ago.
The aroma was subdued, and it had a slightly thickened, rather Niigata-like lightness to it, but it wasn't particularly modern.
I was expecting a little of the freshness of the direct-fermented sake I had drunk before, but I didn't get that feeling.
After opening the bottle, there was almost no acidity from start to finish.
It was more like a food wine. For some reason it went well with goat cheese 🐐.
