I ran to the liquor store in March to buy the unfiltered, unpasteurized sake from Kamikimoto, the same company that produces "Sakewachi" and "Yone Label", which I look forward to every year. We opened the bottle with full expectation.
The sweetness and umami of the rice lingered on my tongue for a while, and the ginjo aroma that came through the nose combined to create a really nice aftertaste and lingering taste!
It's just like it's called "full-bodied".
I'm becoming more and more a fan of Kamikimoto (^^)
