It has been a long time since I got this type of sake. Thanks to Takasakiya Shoten in Todai-mae!
It is a limited edition sake, Dewanosato 2025, from Yamagata Prefecture.
Slightly effervescent and sweet like a melon, with a strong bitterness and a strong umami. 16.8 degrees Celsius, so it's solid. I think I can also taste the acidity.
I haven't really looked into it, but in my opinion, it is representative of the sake of the day. Nice aggressiveness. And it's great that it doesn't go in the wrong direction. By the way, I think the mistake is to use a low-alcohol, sweet drink.
