It has a light color, but is almost transparent.
It doesn't have much of an aroma. It has an aroma of lactic acid with a hint of sourness, spices, green grass, and tobacco mixed in. I think it has been aged for some time.
At room temperature, the main flavors are acidity and umami. There is a lot of volume in the taste, but thanks to the minerality from the ata, the aftertaste disappears nicely. The taste is mellow and gentle, unlike the image you get from the aroma.
As it warms up, the umami and acidity come together to create a nourishing taste. It also has a sweetness that gives it a sensual color that cannot be felt at room temperature.
This is delicious.
It may be a small brewery, but I want them to keep making it. I want many people to know about this sake.
