Kamikimoto of Sakata City, Yamagata Prefecture, uses 100% Tajima-strength sake rice.
It has a beautiful junmai ginjo-like flavor, but also has a firm, dark richness, perhaps due to the characteristics of strong rice. It also has a slightly tangy and dry taste, which is my favorite type. I have had several sakes of Kamikigen, and they are all of a high level.
