In the mouth, the umami flavor spreads rapidly, followed by a dry finish with a complex combination of acidity, bitterness, and astringency. The aftertaste is tight. The rice is polished flat, which means that the rice is shaved into a more oval shape than in the past. The rice is clearer and has less miscellaneous flavors than before. The "51 (Koi)" in the "Glow Series" is named after Kyoto Prefecture's original yeast, "Kyo-no-Koi," which is used in the brewing process.
