<Clearly, grapefruit acid pacan
This sake is made in the perverse (a word of praise) process of single-stage brewing.
The color is a clear, pale white.
The aroma is a strange encounter between grapefruit and the delicious sweetness of rice. It is a type of sake that I have never smelled before.
The impression in the mouth is also grapefruit and rice sweetness. The palate is also a combination of grapefruit and rice sweetness, with a hint of bitter-sweetness and a clear, citrusy acidity. Acid!
The acidity is quite characteristic. The acidity seems to last forever, but it quickly recedes at the last moment, leaving behind a strange sweet, bitter, and astringent flavor. There is an astringent taste that makes the inside of the mouth feel squeezed.
It is a good choice for those who like sour sake. But for me, it is not my favorite type. I thought it was supposed to have more sweetness, but it was overshadowed by the impact of the sourness.
If I were to use a Ghibli analogy, I would compare it to Anna in "Marnie: A Memoir". She is the Anna of the first half of the movie. She is a bitterness of tsun who has not opened up her heart.
