Bought at Takashimaya after the event with Mr. Bouken.
It was my first Survival sake, and I guess it is a summer sake in Eiko-Fuji's lineup.
It is served cold.
When I opened the bottle, I heard a small gas sound.
The color is clear and colorless.
The top aroma is a mild, rancid, ginjo aroma.
The palate is clear and fresh with a gentle sweetness.
The taste has a deep brown sugar-like richness with a lingering sweetness like wasanbon.
The sake rice, Tamanao, is a cross between Yamada-Nishiki and Kinmon-Nishiki, and I enjoyed the sake, imagining it to be Kinmon-Nishiki for its deep richness and Yamada-Nishiki for its clarity, umami, and sweetness.
For Eiko-Fuji, the sweetness and umami may be moderate.
