Sake made by Adachi Shuzo, a sake brewery founded at the end of the Edo period in Gifu City. It is the original "all-Gifu sake. Only Hidahomare, water, and yeast produced in Gifu are used. The president of the brewery is the only person in charge of everything from brewing to bottling. It is produced in small quantities, so it may be a rare bottle. We found it at an Aeon liquor store in Gifu City and bought it. It has a fruity aroma, strong acidity, and a flavor not found in other sake. It is a type of sake to be drunk as a mealtime drink rather than as a stand-alone sake.
