The bottle was laid down from the summer and opened at New Year's. The gasiness was gone, but the sweetness, umami, and acidity were good.

We enjoyed it with oseki-ryori (New Year's dishes) such as simmered vegetables, kuri-kinton (chestnut and kinton), black soybeans, kombu-maki namasu, etc.
