Junmai Ginjo stored for one year. It is brewed with Shiga's sake rice Ginfuki. The slightly yellowish sake has a sweet and matured aroma with hints of chocolate and vanilla. It is sweet and has a strong umami flavor, yet it flows through the mouth with a refreshing feeling. The sweet aftertaste is also pleasant. It's also good when heated. The flavor doesn't collapse, and the umami expands. It's really good.
One year aged special junmai recommended by the brewer. Mizukagami, which is also used for staple food, is cut down to 60%. Perhaps because it has been put to bed, it has a slightly colored taste. The aroma has a hint of caramel-like sweetness and bitterness, probably due to the aging process. The taste is rich, the mouthfeel is round and smooth, and the fluffy flavor envelops the tongue.
