Here's the description of the net. It's long... but my opinion is delicious 😋. Only 7 tanks of Inaba Sake Brewery's famous sake "Sutera" are made every year. The name was taken from the beauty of the star-filled sky that one can see when looking up during the winter brewing season, and it expresses awe and gratitude for the star (Sutera) and the power of nature in the koji and yeast. Sutera" is a series of junmai daiginjos with a fruity flavor created by Nobuko Inaba, the sixth generation brewery head brewer. Inaba Shuzo was founded in 1867 at the foot of Mount Tsukuba in Tsukuba City, Ibaraki Prefecture. Tsukuba's granite soil, and using high-quality sake rice and spring water filtered through the soil, the company insists on traditional handmade sake brewing. Ms. Inaba is one of the few female toji (master brewers) in Japan, and is known for her rich and delicate sake brewing. Sutera Premium Junmai Daiginjo Hand Pressed Unfiltered Unrefined Sake is a fruity sake with a gentle sweetness that fills the mouth without any cloying taste. Its slightly sweet taste makes it an easy drink for sake beginners.
