A slightly ripe, aromatic and sweet aroma. The rich and mellow flavor spreads well, and a unique aroma passes through the nose. It has a long lingering spiciness with a hint of sweetness behind it. The umami is thick and the bitterness is strong, but it has a good acidity that makes it crisp and clean. This should be delicious heated! When the bottle is empty, get a sake bottle and warm it up. The flavor becomes stronger, and it's a crisp dry sake. The acidity is more pronounced than when served chilled. The spiciness lasts until the back end, and the bitterness in the aftertaste finishes it off. When it cools down a bit and reaches room temperature, the flavor expands even more, so it's probably best enjoyed at room temperature.
