I found out you can drink Shinsei near the nearest station and I went! As the owner is from Akita, there were many different types of local sake from Akita. There were also several kinds of Shinsei.
You can feel the sourness in the mouth and the sweetness at the end of the drink.
It twists on my tongue. What is that sweetness?
It's delicious. I'll try the S and X type next.
