As an intermediate wine drinker, I have an image of sparkling sake as being sticky and sweet, and even if not, the weight of the raw sake stands out and makes it difficult to drink, but this sake seems to dispel that image. The attack has a moderate umami of rice that is not too assertive, and from there it quickly finishes. It is elegant and dry. A perfect match for today's smoked salmon spring rolls.

The brand that won the gold medal at the National New Sake Competition on the same day. When you put it in your mouth, the elegant and gentle sweetness spreads, and the sharpness of the alcohol gradually takes effect. There are no hints of miscellaneous flavors. The first taste is plump and umami, but the aftertaste is crisp and clean without any cloying taste. A fine food sake. As it is a 2019BY, it has a sense of maturity, so it will probably go well with any dishes with dark or light flavors. Tonight we had meaty beef with a garlic sauce. It has a nice presence that enhances the flavor of the meat without erasing it.

＋I was curious to buy it because I like dry junmai over +5. Today is Mother's Day, so we had hand-rolled sushi. I don't like the feeling of a crisp, clean, albeit a bit dry, Junmai for Sashimi. I don't like the feeling of "I'm not a fan of that", so I went for the Dai-Sara Junmai right away! The first sip gives a mild umami flavor typical of junmai, but as it goes down the throat, it finishes clean and crisp. ＋If it goes up to +15, it seems too spicy, but this one seems to be +12. I think it is just right. It went well with scallops, which are light and tasty among today's ingredients.
