I was looking for a sake to drink at my parents' house for New Year's when I found Shinmasa. Since my parents are elderly, I thought it would be better to keep the alcohol content low, so I decided on this one, even though it is not a Toyama sake. The label says it all: "Aromas of ripe citrus fruits, plum, and jasmine. The taste is mellow, sweet and refreshing at the same time, just like the cosmos.
Alcohol content: 13%, 100% Akita-produced Kaiyoshinko; milling ratio: 55% for koji rice, 60% for kake rice.
