ひえだの
This is the Betsuraue Zissho that I've been keeping for a long time. In fact, it is not Junmai, but Daiginjo. It's a 5,500 yen honjozo (35% polished rice) made with lavishly polished Yamada Nishiki from Hyogo's special A district. Actually, I noticed it after I bought it. It's not pure rice, and it costs 5,500 yen? Are you serious?
The color of the water is a little yellow.
The aroma is full of melon nuance. However, it is not overdone and has a good elegance. It is nicely integrated.
When you put it in your mouth, you will feel the concentrated flavor of the rice pouring down on your taste buds like an incendiary bomb, and then you will feel the alcohol nicely in the aftertaste, with a little bitterness and a cute acidity, so it is not just a sweet sake. The sweetness is followed by astringency, so it comes together nicely. You can tell that it is not pure rice. It has what is called "sharpness". The depth of this sake is amazing.
Because the sake rice used is different, the taste is different from the Gold Phoenix in the same price range.
It is a special sake that Hououmita exhibits at the National New Sake Competition, and it is a gem that can express the gorgeousness of Hououmita brilliantly.
However, I personally prefer Gold Phoenix.
