An unfiltered, unpasteurized sake made with the full strength of Yamadanishiki. The challenge of expressing an ancient sake with modern techniques has resulted in a mellow, well-honed dry taste. It has a clear aftertaste with no cloying taste, and the umami of the rice has been fully extracted. It is a clear, dignified dry sake that stands out not only when served cold, but also on the rocks or with carbonated water.
It is mildly dry, but at the same time deliciously so. It also has a slightly cloying taste.
