It looks like a draft sake? But it was sold at room temperature, so I guess not. What is "technique"? I bought a bottle of it. It seems to be a series of test brews from this brewery. I thought it was the first time to use Yamadaho sake rice, but this is also the first time for this brewery to use it. I wondered if it was a cross between Yamadanishiki and something else. I wondered, but it turns out to be the parent of Yamada-Nishiki! 😳 I got the impression that it was fresh, but to be honest, I didn't really understand it since I had a glass of wine before the sake. Refreshing but sweet and honey-like? It was a delicious sake. I would like to try other Yuki no Bijin as well.
